Okay, So Little Addie decided 3 months ago that she wanted a "MONSTER PARTY" so here it is! I had a little more free time planning this party than I did when I did Daisy's, so sorry for all the pictures but there were a lot of cute ones and I know the grandma's would want to see all of them... but don't worry, I didn't put ALL of them on!

Well, she's off! Daisy is now in kindergarten and she loves it! There were a few tears shed on the first day by Daisy, Mama and Daddy but when I went to pick her up the first thing she said as she was running to me was, "Mom, you were right! Kindergarten is fun!!" Yeah!!

Daisy Turns 5!!

Every since January of this year, Daisy has wanted to go and see the Statue of Liberty. I am not sure how she got so interested in it but when it was time to plan her birthday party, she wanted a Statue of Liberty party with a huge Statue of Liberty cake. So that is what is got! It was a perfect little birthday party and all the kids had fun and they all hid from the hot sunshine under the trampoline or under the table! I just cannot believe my baby girl is now 5!! Happy Birthday Little Daisy!

Our new little boy Jedidiah Scraper Cox is Here! He was born on January 22, 2011 at 1:39 am, 8lbs 3oz and 21.5". We are so excited to have him here and I am so proud of my growing little family! The girls are in love with him and always want to hold him! They are wonderful big sisters! And in case you were wondering about the middle name, it's a family name pasted down from Dusty's father's father's father's father's. It's a little different, I know, but you have to keep with the tradition!
Just kidding! Daisy actually came up with the name 3 months ago and has been wanted to call him Scraper ever since!! So now he can always say that his 4 year old big sister gave him his cool middle name! Welcome to our family little Jedidiah! We love you!

Disneyland!

For my birthday present this year Dusty took the girls and I to California! Dusty parents had moved to LA this year so we were able to spend time with them and to take the girls to Disneyland! There was also a fashion convention we went to for the store. We had an amazing time and here are some pictures from Disneyland. Daisy favorite part was the "It's a Small, Small World" ride. She thought it was beautiful, but she was also a very brave girl and went on all the big scary rides with her Daddy that Mama and Addie couldn't go on! Oh... that's right I haven't announced officially in the blog world but we are expecting a little baby boy!!! The due date is for the end of January!! That's why I couldn't go on some of the rides. But I did sneak onto the Tower of Terror and Indiana Jones.... hey, I have never been to Disneyland and had to go on those two!! Indiana Jones was definitely my favorite ride. Enjoy the Pictures!

Banned from Scissors!

So here is the story of why Dusty (that is not a typo... I do mean Dusty!) is from now on only allowed to use this kind of scissors....

The other day I came home from working at the store to my sweet little girls. I was home for probably 40 minutes when I noticed the hair trimming scissors were left out on the counter in the bathroom. I thought for a minute what Dusty could have been doing with them and then I immediately went running for Addie. Her hair was all crusted to her head with hairspray trying to cover up the damage that had been done... someone must have know they were going to be in BIG trouble!!!
So here are the resulting pictures...

The bad news is, Addie's bangs had just gotten long enough to be pulled back into her pigtails without a clip and now Daisy keeps saying, "Addie looks just exactly like a boy!!" Needless to say Daisy & Addie were adequately informed that Daddy is not allowed to cut either of their hair ever again!
Now the funny thing is, is the striking resemblance Addie is to THIS.......

Dusty's 30th Birthday Suprise!

On November 5th, Dusty turned 30 years old! What a big day! So for Dusty's birthday I suprised him with a 7-night cruise to the Mexican Rivera. We drove up to Coeur d'Alene on November 13th because my parents had bought Dusty and I tickets to the broadway musical, "Lion King". They had bought the tickets before we decided to sell our house and move, but it was perfect because we could go on the cruise and leave the girls with their grandparents. The play was amazing with all the intricate costumes. (Thanks mom and dad!) Then on Sunday we flew to LA for the cruise. It was so much fun! It was great to get away and spend some time together in the wonderful hot sunshine! Our stops were Cabo San Lucas, Matazalan, and Puerto Vallarta. The weather was perfect the whole time! In Cabo, we went parasailing and snorkeling. The parasail went up +600 ft! It was a beautiful view. The water was so warm too! In Matazalan we just walked around the city and went to the flea market. The meat section smelt so bad and we saw lots of pigs, or their parts atleast. (check out the pictures below!) Then In Puerto Vallarta we rented a convertible bug that they had just cut the top off. Then we were in for a crazy ride because first of all it was a rental and Dusty was driving and second of all we were in Mexico and everyone drives like Dusty down there!! And the bad news is my seat belt wouldn't work!!! But all in all we arrived safety back to the boat with only getting pulled over once. We had turned on a one way road, (but there was no sign) anyways, a cop in the street told us to pull over and he asked for Dusty's license and wanted to give us a ticket for 1000 pesos, (about $100 dollars). Yeah right, so anyways Dusty pulled out his wallet, which had quite a bit of cash and asked the cop how much he wanted. Then the cop was like, oh no I can't take your money, people are watching me. So he had us drive up the block and Dusty met him on the sidewalk and slipped the money in his litte purse thing and then he handed Dusty back his license. Dusty then booked it back the car before the cop realized Dusty only gave him 3 rolled up 1 dollar bills! Ha Ha Ha!
Well, Puerta Vallarta was our favorite stop. It looked like a jungle there and we went on 10 ziplines through the jungle and over rivers. We got to hold little monkeys while they ate out of our hands!
We had a great time the whole week and ate a whole lot! We came back tan and were excited to see our little girls. We missed them so much!

Halloween Week

Here are some pictures from our Halloween Week!
We decorated cookies on Sunday and in this picture Daisy is trying to make the same face that the pumpkin cookie has.

Mole Burning on Sunday Night!

Okay, this post is at the request of Dusty... Dusty discovered about 10 years ago that he could burn his moles off by getting a screwdriver red hot and then singeing the skin. Sounds like fun, huh?? Well, anyways, he has burned a few of my moles off before and decided to do a few more tonight. It's a nice, wholesome, couple-bonding activity.

This morning I woke up and I wished we had moved to Las Vegas, NV. I was also wishing that global warming wasn't such a big scam because I think it would be really nice if things were a little warmer!

Toys... Toys... Toys...

The last few weeks Dusty has been buying quite a few little boy toys! So I thought I would post pictures of them. But if any of you know Dusty at all, these toys might not be around for long!
He got a Hummer h2, an acura for me, a hardknock 515o hardtail cruiser, and a honda 4-wheeler. The other day we went for a ride down by the canal on the 4-wheeler and enjoyed the beautiful fall leaves. But there is one other suprise toy that he got that is REALLY awesome but you will have to wait to see it until we send out our Christmas cards!

Our New Home!

Here is a quick little catch-up with us. Then maybe I will stay more up to date! If you haven't heard yet, we have moved to Idaho Falls, ID! We have rented a nice home and are really enjoying our neighborhood. Daisy has lots of little friends in the neighborhood and is attending a mommy preschool two days a week. She loves it! This last summer we celebrated Daisy and Addie's birthdays! Daisy turned 3 and had a Sleeping Beauty party and Addie turned 1 with a teddy bear party. We had a wonderful summer! So now enjoy a slideshow of our pictures from the summer!

Huge Changes Ahead!

Okay it's catch up time, so you might want to go and grab some munchies before you start to read this post because A LOT has happened since April. Here we go from the beginning.....

First of all here is a cute picture of the girls on Easter morning.

In the morning of Sunday May 31st, our dog Goosey had 6 little puppies. They were all beautiful little golden retrievers and Goosey was a wonderful mom. They just turned 6 weeks so now they are all with their new owners and we miss having the little puppies around. Actually Daisy loved the little puppies when they were first born but once they turned 5 weeks old they started to run and she didn't like that much. Daisy would go screaming and crying around the yard with 6 little white fluff balls nippin' at her heels. Dusty and I got a pretty good laugh out of it though!

Next Dusty and I have called our property Sleepy Hollow so Dusty set out and did some landscaping. He put 3 boulders that were about 5 ft high at the entrance of our property and then made a sign and welded it into the rock. Then he hooked up some lights to shine on it at night. It turned out looking awesome but then again anything he does always turns out that way! Great job Dusters!

Okay now for something I never thought I would ever have on my "to do" list, let alone checked off! On June 27th, I ran a Mountain to Meadow half-marathon at Lolo Pass, Montana. I have been training with some friends and we went and did it! Dusty came with Addie too, to help and be the babysitter! This was my first race ever and it was STINKIN' HARD! It was uphill for the first 4 miles, at least! And then it was uphill again and again and again! At one point we could see the other runners right above us on the switchback. Trust me, that was not a comforting thought. Anyways I did it and ran the whole 14 gruesome miles! That was our goal... not to walk and we accomplished it! Thanks to my friends Joni, JoAnn, and Travis! My time was 2:21:47 which I was very happy with considering we were at 5600' elevation and the whole thing was practically uphill!! Here are some pictures and a picture of the beautiful meadow we ran by. Addie also got some shots with the mountain men that were present!

Okay now for the biggest news of all! We decided to put our home up for sale, just to see if it would sell and it did! It actually sold in 1 week with more than our asking price. We ended up showing the house 8 times and had 3 offers on it!! The deal ended up being perfect, it was debt free on our side and all cash on the buyer side too, so it went smooth as silk!

So what's next for the Cox Family you ask???

but we do have things in the works... I guess you will just have to stay tuned to find out further details. But one thing for sure we will be leaving the area.... onto another adventure!

Coconut Syrup!!

Okay... so those are just your ordinary pancakes from a pancake mix and blueberries but the recipe I am posting is for the Coconut syrup that is on top of the pancakes! This stuff is so wonderful!! I found the recipe again on the sisters cafe. Dusty doesn't even care for coconut and he loves the stuff! I made it first with french toast and then put the leftovers in the fridge. It is supposed to last about a month but I don't know if we will ever make it that long. We are already on our second batch! Goodbye Mrs. Butterworth's!!!

Coconut Syrup

7-8 T. butter
¾ c. buttermilk
1 c. sugar
½ tsp baking soda
1 tsp coconut extract

Place butter, buttermilk and sugar in a pot. Then turn stove on medium and stir until butter melts and sugar dissolves. Bring to a boil and boil one minute. Remove from heat and add soda and flavoring. It will bubble up; just continue to stir and give it a few minutes for the 'fizz' to reduce before serving. Store the leftovers in the fridge and then just mircowave for the next breakfast!

Yep! That's right, little Addie is already 6 months old. She has been so much fun to have in our family. It seems like she has always been here, but yet it has only been 6 months! She has her two bottom teeth coming in and she is working very hard at sitting up and is almost there. She is always smiling and is such a happy baby. She has a smile for anyone that looks her way.

Shredded Sweet Pork Salad

I enjoy cooking and trying lots of new recipes and most of the time Dusty says that I cook better than the resturant... (but I think he really likes the lower price too). Anyways I love to try new recipes and my favorite ones to try are ones with pictures. I also like it if someone else has tried the recipe and likes it. So I decided to post some of the recipes I try and like, with pictures! I hope everyone likes them and I would love comments if you try any of them, plus any changes you made to them. Like I said, I enjoy cooking but I don't enjoy the dishes, so I have an opening in my resturant for that position but I just can't seem to get any applications................ well at least from someone tall enough to reach the sink!
Here is the first recipe, I just tried it last night and we really liked it. (Daisy just had a tortilla with the cheese and pork and some beans on the side but she really liked the beans... she ate them for lunch too!) It is similar to a salad you can get at Cafe Rio or Cafe Chulo. It was my first time ever buying tomatillos... which was fun! I got the recipe from another blog called the sister's cafe.

Shredded Sweet Pork Salad

Assembling your salad:
Toast a large tortilla sprinkled with cheese under the broiler until slightly crisp. Then layer chopped romaine, rice and beans, shredded pork, pico de gallo, guacamole, and crispy tortilla strips. Drizzle on dressing, sprinkle with cheddar cheese and garnish with a lime wedge...and voila! Dinner is served! Yummy!

Shredded Sweet Pork
3 lb pork roast
1 c brown sugar
1 c Worcestershire sauce
1 tsp oregano
1 tsp powdered ginger
1 tsp salt
1 tsp chili powder
1 tsp garlic powder
2 Tb dried minced onions

Cook all ingredients in a crock pot on low all day (abt 8 hours). One hour before serving, remove roast and shred it. Dump out all cooking juices and place shredded pork back into crockpot and add...

1 c brown sugar
1 c red enchilada sauce

Cilantro Lime Rice
3 c water
3 c Minute rice
4 cubes chicken bouillon
4 tsp garlic, minced
1 Tb canola oil
2 Tb fresh lime juice
1/2 bunch of cilantro
1/2 onion
1 can green chilies

Blend cilantro, onion, and chilies in food processor. Bring water to boil and add all ingredients, simmer covered for 30 minutes or until rice is cooked. *I used whatever rice I had but just changed the water and rice ratio. I actually only made 1/3 of the amount of rice and it was plenty of us.

Garlic Black Beans
1 can black beans
1/3 c tomato juice
2 cloves garlic, minced (1 tsp)
1 tsp cumin
2 Tb canola oil
1/2 tsp salt
2 Tb chopped cilantro

Heat oil then add cumin and garlic until garlic begins to pop. Add rest of ingredients and serve warm.

Creamy Tomatillo Dressing
3 tomatillos, peeled and quartered
juice of 1/2 lime
1/2 c buttermilk
1/2 c mayonnaise
1/2 c sour cream
1 pkg dry buttermilk ranch dressing
1 c fresh chopped cilantro
6 green onions with ends, chopped
2 cloves garlic, minced (1 tsp)
3 tsp sugar
1 jalapeno, sliced thin - add to taste

Place all ingredients in food processor or blender and mix well. Refrigerate for 1 hour before serving.

Tortilla Strips
White or corn tortillas
Salt
Cooking oil Spray

Cut tortillas into strips with a pizza cutter. Spray with cooking oil and sprinkle with salt. Then bake at 350 until lightly brown and crispy.

Our New Family Pet

We had a new addition to our family. Yep... it's Bullwinkle the Moose. This moose hung out around our house for 4 days. His favorite spot was right outside Daisy's window. She loved having him there! When she would go down for a nap we would have to tell moosey goodnight and then shut here blinds and the first thing when she got up she had to check to see if moosey was still there. One day when she was supposed to be taking a nap I went into her room to check on here and she was standing on her window sill, behind her blinds and banging on the window at the moose.

Now Daisy keeping saying, " Moose, gone." I guess this is her first broken heart!

On Valentine's Day Dusty was heading home from Utah so Daisy, Addie and I decorated the house for him!
Then we made him a special Valentine dinner!

Here are the girls in their Valentine's outfits for church on Sunday. Unfortunately Addie didn't get to wear her's very long because she had a major blowout at church that ended up all over her outfit. So I took her naked into the Primary room to get the present I had brought for the new baby boy in the ward... but they weren't there that day! So I had a few of the girls dress Addie in the little blue puppy pajamas but she still had her cute little pink bow glued to her head. One of the primary kids asked me if she was supposed to be a boy or girl! Oh well!

Yes... Finally I have succumb to the temptation of making my own family blog. Whee! So I hope anyone who looks at it enjoys it because I do! I am just going to start it off with some of our pictures from the Christmas season.
